bubbles enliven the wine. Chardonnay contributes elegance, Pinot

Only the finest, first 200 litres
of free-run juice is selected to achieve elegance of taste. No
dosage is added so no sugar remains after the bottle fermentation.
This is the most natural of all 'Methode Cap Classique' sparkling
wines.

His seemingly boundless energy, his ever-inquiring mind and his
love of phenomenal wine, art and poetry ensure that Achim is one of
SA's most well-known wine personalities.
Achim's well-respected career began with a 4-year apprenticeship at
EK Greens. He then traveled abroad to continue his studies in
Europe, specifically France and Germany. The focus, back then, was
on learning slowly and thoroughly. It was about getting yourself
completely enmeshed in the process. Achim's attributes his, and
Haute Cabrière's, holistic view of wine making to these early
adventures.
In the art of wine-growing Achim has found a passion he'll never
tire of, an unpredictable, spellbinding and completely captivating
love.
