famous Champagne Houses of France. Chardonnay and Pinot Noir
determine the style: Chardonnay contributes elegance, Pinot Noir
intensity and richness. The "lime" character of the Chardonnay
dominates but are well supported by the complexity of Pinot
Noir.
Pierre Jourdan Cuvée is
crisp, complex and rewarding on the palate. The color a rich
copper, typical for a "cuvée", a blend.

is a man in love with life's zing. His seemingly boundless energy,
his ever-inquiring mind and his love of phenomenal wine, art and
poetry ensure that Achim is one of SA's most well-known wine
personalities.
Achim's well-respected career began with a 4-year apprenticeship at
EK Greens. He then traveled abroad to continue his studies in
Europe, specifically France and Germany. The focus, back then, was
on learning slowly and thoroughly. It was about getting yourself
completely enmeshed in the process. Achim's attributes his, and
Haute Cabrière's, holistic view of wine making to these early
adventures.
In the art of wine-growing Achim has found a passion he'll never
tire of, an unpredictable, spellbinding and completely captivating
love.

sundial. This sundial is uniquely marked by an inscription on its

the crux of the Haute Cabrière philosophy.
The core belief that wine is grown not made makes the farm's ethos
incredibly real and intrinsically human.
This is seductive conviction and it's intertwined with the farm's
ultimate philosophy that wine is bigger than one, it's the
combination of four: Sun, Soil, Vine, Man.

This cellar-style restaurant is built into the hill that overlooks
the beautiful Franschhoek Valley. Inside the restaurant the view is
as exceptional. Guests are able to look into the Pinot Noir
Maturation Cellar while they dine out on exquisite dishes. The
dramatic vaulted cathedral arches make this a perfect venue for
weddings and other events.
The Haute Cabrière Cellar Restaurant's speciality is innovative
cuisine. Each dish is designed to be accompanied by an elegant
