The Fire Heath Chardonnay is named for an indigenous fynbos plant found in the Walker Bay region. The wine is driven by a citrusy core of lime and tangerine, with loads of fresh acidity and a bright mineral backbone. Luscious pear flavors and floral top notes round it out, with delicate almond and spice notes coming through on the finish.

Vinification and Maturation
The grapes were hand harvested in the cool early morning and whole bunch pressed, extracting only the purest juice. Fermentation occurred naturally in a combination of 300 and 500 liter old French oak barrels and stainless steel tanks. The tank-fermented portion helps to keep wine fresh and vibrant, while the barrel fermented portion brings texture and richness. Both components spent 10 months on the gross lees before blending and bottling.

Instead of owning their own vineyards, the B’s (Bruwer & Bruwer) source grapes from different locations best suited to each variety, opting to create working relationships with similar minded people in the industry who believe in their avant-garde winemaking approach.
