Blanc de Mer – ‘white of the sea’ – is built on a foundation of Riesling, which provides a foundation of linearity, while fully-ripe Viognier from the Elgin valley contributes a nose of bright floral fragrance. Chardonnay brings richness and structure, while the inclusion of a small percentage of Sauvignon Blanc adds a subtle freshness and acidity. A wonderful pairing with an array of seafood dishes, the Blanc de Mer is also a perfect aperitif.

Vinification
While estate-grown Riesling forms the basis of this unique blend, Viognier from various grower vineyards have contributed over the years – from the Overberg, Stellenbosch and even Upper Hemel-en-Aarde Valley. A mature vineyard in Elgin, with a significant granitic soil component, is currently delivering consistent results. Before pressing, all grapes are destemmed and fermented in a cool environment without oak. Sauvignon Blanc makes a return to the blend, mostly for aromatic diversity and palate refreshment.

Established in 1989, Bouchard Finlayson is a boutique winery dedicated to the making of Pinot noir, Chardonnay and Sauvignon Blanc wines of outstanding quality.
Located in the wine ward of Walker Bay, an hour and a half from Cape Town, the 125-hectare property currently has 22 hectares under vines, the rest is mountain land, covered by the spectacular indigenous 'fynbos' flora of the Western Cape.
Bouchard Finlayson's flagship wine is the Galpin Peak Pinot Noir, which has won many an award and accolade. Growing on the slopes of Galpin Peak, repeated vintages of this path-blazing wine continue to reflect a true celebration of Pinot-crafting, consistently endorsing the Hemel-en-Aarde Valley as a jewel in the hunt for this elusive grape.
