The Chamonix Troika has deep ruby-mulberry color when young, with scents that recall vanilla, sweet ripe cherries, blackberries, and other spices. The wine is amply structured; full, round, and smooth on the palate with rich fruit and berry sensations, beautiful harmony and length of flavor.

Vineyards / Vinification
Grapes are selected
from separate plots; Cabernet Franc
2 hectares, Cabernet Sauvignon 2.4
hectares and Petit Verdot 1 hectare in
deep, strong, partially clay soils at an
altitude of 380-450 metres above sea
level. The vines, between 15 and 26
years, are planted at densities of 3500-
5000 per hectare and trained in the
traditional Cordon method.
The
grapes are bunch-selected and berrysorted by hand on sorting tables.
Grapes are soft crushed and the must
fermented in stainless steel and concrete
fermenters at 28° C for 12-22 days on
the skins with frequent pumping
of the cap. Malolactic fermentation
occurs naturally during 18 months
of maturation in 228ℓ French oak
barrels with about 60% new oak. Although impressive young, it should
reach a prime at 10-15 years.

The beginnings of the beautiful Cape Chamonix wine farm are traceable until the year 1688 when Huguenots purchased the estate. However, the current winemaker generation does not only look back on its past but always into the future which is why Chamonix is nowadays known for its numerously awarded wines, such as the Chamonix Chardonnay or the Chamonix Pinot Noir Reserve. The perfect location of the 50 hectares of vineyards plays a significant role in this development. They stretch to the eastern slopes of the Franschhoek Mountains, surrounded by 300 hectares of natural beauty. A unique view of beautiful nature! Additionally to the awarded top wines, the winery also produces its own crystal clear mineral water which - in terms of quality - belongs to the best in the country and is therefore ideal to be enjoyed with wine.
The wines from Chamonix receive their true character and freshness due to best cultivation conditions. Great importance is attached to the natural fermentation process and no artificial acidification is used. In line with the company philosophy, the wines strive embody pure and natural products of pleasure. Unaffected yet full of elegance.
