Winemakers Comments
Bramble-berries, blueberries, crushed stones, orange zest, pink peppercorns and dried roses on the nose. It’s medium-to full-bodied with firm, very fine tannins. Layered, textured and mineral with a vibrant, wild finish.

Vinification
This Grenache noir based blend again includes a portion of wine that was
fermented and matured in a concrete vessel – both Grenache and Syrah. Along with
the concrete vessels, the wine was also matured in old 500 L neutral French oak
barrels and a 4 100 L foudre (Pinotage). The Elpidios is produced in similar fashion
to our main Grenache noir in terms of long, gentle extraction, the use of 50% on
average whole bunches and then pressed off. After bottling, the wine was aged in
bottle for 18 months before release. This vintage is again based on grapes grown in
granite soils from the Paardeberg, blended with structured shale/schists from the
east, clay rich soils from the north and iron mixed soils from the west.

Winery
David Sadie was born and bred in the Swartland and studied Viticulture and Oenology at the University of Stellenbosch. It was here that he met his wife, Nadia, a qualified soil scientist and viticulturist.
David gained experience both locally (Waterford, Rustenberg and Saronsberg) and internationally (South Pacific Cellars – New Zealand, Chateau Quinault – France, Yves Quilleron – France). The tasting of Mediterranean cultivars and its regions made a lasting impression on David’s ideas and palate.
David is a part of Swartland Independent Producers who believe in a natural approach with their wines. Some of the grapes David works with are harvested from organic vineyards and some from old bush vine blocks from farmers in the Swartland who share the same vision.
