The nose initially shows opulent tropical fruit aromas, including aromas of granadilla, guava, and white peach. These aromas are complemented by a subtle nuttiness and some spicy notes as the wine develops in the glass. Delicious tropical flavors prevail on the palate, these are further complemented by distinct minerality and a fresh, zesty core. Some barrel ageing applied in the cellar softens the acidity on the palate and results in a rounded, textured mouthfeel.

Cellar Techniques
This 2021 vintage is the maiden Constantia Origin Sauvignon Blanc produced by the Estate. The grapes come from 2 blocks of Sauvignon Blanc planted on lighter clay soils, on predominantly South and East facing slopes located about 10.5km away from the False Bay coastline, ideally positioned to produce world-class cool climate Sauvignon Blanc. Three separate components were harvested at different times from these blocks to allow for the creation of distinct components to add further complexity to this wine. For each of the respective component’s grapes were hand-picked into small lug boxes and cooled in a specialised cooling room to 5ºC. The following morning the bunches were de-stemmed and gently pressed, recovering about 70% of the juice. Only the premium clear juice was racked off. The 1st component was naturally fermented and aged in older 500L French Oak barrels for 6 months. The second component was inoculated with a cultured yeast strain and then transferred to older 500L French Oak barrels to complete fermentation and further mature in oak. The 3rd component, which represents about 35% of the total volume of the blend, was inoculated with a cultured yeast strain and racked to a stainless-steel tank. Following 6 months maturation the respective components were blended for a layered, complex white wine.

Uniquely characteristic of its wines is its signature of finesse, derived from the cooler climate conditions its vines are exposed to as a result of its elevation and close proximity to the oceanic body that is False Bay, thus delivering very distinctive wines not found elsewhere in South Africa.
