The 2016 Elderton Command Shiraz is rich, warm and generous. Deep crimson in color, the wine exudes aromas of lifted black fruits with vanilla spice undertones. The palate is characterized by rich and attractive dark forest floor fruits with nuances of aniseed, supported by well-rounded tannins that provide structure, leading to a very long finish.

Cellar Techniques
The fruit was harvested by hand, with five small parcels harvested over five weeks to attain complex nuances. Fermented in open top concrete fermenters with chilled ferments, hand pump-overs and cap submerging with oak header boards for eight days; the process finished with barrel ferment and malolactic fermentation in new French and American puncheons.

The family Estate, located in Nuriootpa, where all of Elderton’s icon wines are produced, have in recent years been able to acquire other significant sites around the Barossa to further showcase the diverse regionality that exists within the appellation. The winemaking team works very closely with their viticulturalists, throughout the year, to produce quality fruit with a focus on long term sustainable production, low yields, low irrigation and minimal inputs.
