The Fairview Single Vineyard Selection Eenzaamheid Shiraz flows with a dark red colour into the gourmet's glass. The bouquet gives off delicious notes of blueberries, plums and cranberries which are underlined by pepper and violets. The palate displays nuances of cinnamon and well integrated oak notes. The red wine that matured in French oak for 20 months is wonderfully balanced and the soft tannins peak in a lingering finish.

Cellar Techniques
The grapes were handpicked at 24 balling. The fruit was brought to the cellar in small lug boxes, destalked and hand sorted over a sorting table. All raisins, under ripe berries and stalks were removed. The sorted berries were sent straight to open French oak fermenters (foudres). Only manual punch downs (pigeage) were used during fermentation. The skins were basket pressed, and malolactic fermentation was completed in 40% new French barrels, with the remainder maturing in second and third fill barrels to respect the integrity of the wine. Barrel aging lasted 20 months.

Having been founded at the Cape in 1693, the Fairview winery with an area of 300 hectares of land at the foothills of the Paarl Mountains was one of the very first wineries to be established. Since 1937, it has been owned by the Back family and is currently being run by the third generation - and quite successfully, to say the least. Experimenting with lesser-known grape varieties allows for innovative creations that are closely linked with tradition. Environmental protection and sustainability are crucial factors when it comes to the production of fruit-dominated wines.
Over the past twenty years, Fairview has developed a respected and awarded cheese business, initially focused on goats' milk production but today producing an extensive range of Jersey cows' milk products too.
The cellar door experience is focused on a real Winelands experience, with a simple offering of wine and cheese tasting, cellar door sales, and a farm eatery. The difference at Fairview is the attitude of the people who work here, making it one of the most visited farms in the Winelands.
