Grapes were picked at 24.2°B and whole-bunch pressed to 1.4 bars of pressure. The juice was left to settle for two days and racked to barrel. Using 100% wild yeast, fermentation occurred over an 9- day period. The wine spent 9 months on the lees in 30% new French oak and 70% second and third fill barrels.

Winery
GlenWood is a family owned boutique winery located in an area of outstanding natural beauty very close to Franschhoek.
The winery has been developed over the last thirty three years to become a leading South African wine producer and all their wines are made from grapes produced on their land, thereby reflecting the unique terroir of their small valley. The wines are uniformly and consistently highly rated by wine judges and have received numerous awards and prestigious listings.
As part of their commitment to protecting the environment, they have dedicated ten hectares to the regeneration of indigenous Cape fynbos and use only environmentally-friendly farming practices. Their accreditation by WIETA attests to the seriousness with which they view the development of their people as a key ingredient of their success. On the wider front, they are heavily involved in a number of projects within the Franschhoek community, most notably “Bhabhathane”, whose objective is to transform education in the Franschhoek valley.
