Wine Composition
100% Pinot Noir
Winemakers Comments
The wine has a bold rich color. This hints at a more substantial style of Pinot noir. On the nose Spicy Oak gives way to violets and forest floor. The entry is silky. The mid-palate weight of this wine is remarkable. There are, baked plums and morello cherries to be discovered. The youthfulness of this wine is revealed by the cocoa powder tannins that develop along with hints of dark chocolate and strawberry.

Cellar Techniques
The 2018 vintage Pinot Noir comes from a 3.25ha vineyard planted to two different clones. Hand harvested, destemmed, fermented in open fermenters for a period of ten days, utilizing ambient yeasts and delestage to coax both flavor and color from the fruit. The must was lightly pressed, racked off into French oak barrique (20% new) and malo-lactic fermentation occurs in barrique. The wine was barrel matured for a period of eleven months and lightly filtered prior to bottling to maintain the wines integrity and delicate Pinot flavor spectrum.

Winery
Originally from Scotland, the Wilson family hail from three generations of Cape winemakers, having grown up on their grandmother’s Rust en Vrede vineyard in the 1950’s and 60’s.
Gavin and Ewen’s dedication to excellence is reflected in their authentic and traditionalist approach to Burgundian-style winemaking and their choice of winemaker, world renowned Master of Wine, Richard Kershaw.
Due to Elgin’s proximity to the cold Atlantic Ocean and high altitude, the valley’s cool environment makes it the ideal home for varietals such as Pinot Noir, Chardonnay, Rose and Riesling and permits a predominantly non-interventionist approach to wine making. Working in harmony with nature, our grapes are harvested by hand at the optimal moment for full flavors before being transported are a short distance to the local Valley Green winery. Handled as minimally as possible, the integrity of the fruit and its clonal characteristics are maintained, allowing Richard to craft elegant and exquisitely complex wines that reflect the unique climate and terroir of Lothian’s vineyards.
