Winemakers Comments
The Mont Rochelle Chardonnay flows into the glass of the connoisseur in a pale straw yellow colour. The white wine has matured half in French oak and half in stainless steel tanks, so the fruity Chardonnay impresses the connoisseur not only with its balanced aromas and exceptional freshness, but also shows a wonderfully integrated oak component and a crisp acidity. In the bouquet, notes of marzipan and lemon are particularly evident. On the palate, citrus and stone fruit are particularly noticeable, which are particularly refreshing in the finish and leave a pleasant mouth feel. Therefore, you should definitely enjoy the Mont Rochelle Chardonnay pure, but the white wine also tastes great with fish, seafood or poultry dishes.

Cellar Techniques
Harvested in the cool of the morning, the grapes were carefully selected in the vineyard before undergoing gentle whole bunch pressing. Harvested: 14th & 18th Feb 2019. The juice was then inoculated with selected cultured yeasts that favour aroma and flavour development in the wines. Extended less contact in barrel and Battonage (stirring of barrels) was employed. Resulting wines were aged in 50% French oak (75% 2nd and the balance in 3rd & 4th fill) and 50% in stainless steel to preserve aromatics and freshness. The final blend is comprised of two different clones of Chardonnay to lend complexity to the wines.
