Cellar Techniques
All the plots are harvested manually and vinified separately. Fermentations are natural with local yeasts and take 4 to 6 months depending on the type of terroir. Aging lasts for at least 11 months for all 40 wines produced annually. In September, the wine is bottled. The bottles are corked using a high-end cork. Finally, marketing is based above all on the maturity of the wines and their geological origin. The year of production is high in casks and vats. More than 4 years in bottles (ie around 1,000,000 bottles) improve in the cellar. With aging, the aromas and acidity amplify and become more complex to create a perfect balance of wines that harmonize with the dishes

For generations, the Rolly Gassmann estate, independent winegrowers and harvesters, has been based in the heart of Alsace in Rorschwihr.
The successive geological upheavals have shaped in the commune of Rorschwihr no less than 21 types of all different subsoils, predominantly of limestone, marl and clay, thus producing 12 unique and different crus (localities) expressing a strong identity in wines.
Everything is done to systematically seek the balance between the biological activity of the subsoil and the growth of the vine, in order to obtain the most subtle and complex grape possible. Every second row of vines is grassed, the other row is plowed. The base of the foot is chemically weeded over a width of 20 cm. To fight against the cryptogamic pressure, all the vines are worked according to the principles of biodynamic culture for the vegetable part. All the interventions and all the works are directly linked to the different cosmic rhythms (astral conjunctions, planetary oppositions for example) and by means of various preparations and plants.
