Wine Composition
100% Cabernet Sauvignon
Winemakers Comments
Opaque in color with prominent aromas of cassis, blackberry, bramble and mulberry. The dark fruit is layered with savory notes of cured meat and dried herbs. Rich fruit follows on the palate, sustained by fresh acidity and fine, mouth-coating tannins. Flavors of sandalwood, allspice, worn leather and pencil shavings add complexity and depth to this classically styled Stellenbosch Cabernet Sauvignon.

Harvested grapes are destemmed, crushed and pumped into open top fermentation tanks where they undergo a 21-day maceration period involving a 7-day fermentation with pump-overs and manual punch-downs 2-4 times daily. Barrel maturation in 100% French oak barrels (20% new, 20% 2nd fill, 20% 3rd fill, 40% 4th fill), in 300l barrels for 18 months.

Winery
For 315 years Rust en Vrede has stood peacefully among the vineyards of Stellenbosch. The company and the estate are now headed up by Jean Engelbrecht and their family has specialized in producing only red wine with the focus on Shiraz, Cabernet, and Merlot. The underground cellar of the estate was the first of its kind for a privately owned South African winery. Designed by renowned architect Mr. Gawie Fagan, the perfectly temperature controlled environment is of invaluable benefit to the production and bottle maturation of unique wines.
Rust en Vrede is a remarkable example of exquisite landscaping. At home and abroad, this unassuming Stellenbosch Estate has made a name for itself far beyond its modest, but infinitely charming, 55 hectares.
