Vinification
They ferment all their wines wild. Their red wines are fermented in old open concrete tanks with manual punchdowns and matured in concrete eggs, French oak foudres and barrels. They work mainly with Mediterranean varietals, (old) bush vines and besides their own grapes, they also source grapes from Wellington, Swartland and Stellenbosch.
